Prior to Grand Wailea, Lofaro was executive chef at Mill's Tavern in Providence, Rhode Island where he managed the development of seasonal menus, service training, food costing and purchasing, and daily kitchen operations. During his tenure at Mill's Tavern, the restaurant received the distinguished Mobil Four Star Awards. His professional career began as sous chef tournant at the Grand Wailea where he trained with renowned Chef Michael Mina of Aqua and Aqua.
